Dr. Ned Spang, FST Assistant Professor, is interviewed in a Popular Science article from March 9, 2021, "11 percent of food waste comes from our homes", about the environmental impacts of the waste produced in the food system.  The article, written by Sara Kiley Watson, carries the tagline "As consumers, we can help a lot—starting with ignoring those sell-by dates".  Interesting! 

Dr. Spang states, “A tremendous amount of resources go into the food that we produce, and the food system also generates significant greenhouse gases emissions and air/water pollution. So when food is wasted, all of these environmental impacts occur without any corresponding tangible benefits to society.”
